Ingredients

2 slices fresh white bread

1/4 cup milk

3 tablespoons clarified butter, divided

1/2 cup finely chopped onion

A pinch plus 1 teaspoon kosher salt

3/4 pound ground chuck

3/4 pound ground pork

2 large egg yolks

1/2 teaspoon black pepper

1/4 teaspoon ground allspice

1/4 teaspoon freshly grated nutmeg

1/4 cup all-purpose flour

3 cups beef broth

1/4 cup heavy cream

Directions

Preheat oven to 200 degrees F.

Tear the bread into pieces and place in a small mixing bowl along with the milk. Set aside.

In a 12-inch straight sided saute pan over medium heat, melt 1 tablespoon of the butter. Add the onion and a pinch of salt and sweat until the onions are soft. Remove from the heat and set aside.

In the bowl of a stand mixer, combine the bread and milk mixture, ground chuck, pork, egg yolks, 1 teaspoon of kosher salt, black pepper, allspice, nutmeg, and onions. Beat on medium speed for 1 to 2 minutes.

Using a scale, weigh meatballs into 1-ounce portions and place on a sheet pan. Using your hands, shape the meatballs into rounds.

Heat the remaining butter in the saute pan over medium-low heat, or in an electric skillet set to 250 degrees F. Add the meatballs and saute until golden brown on all sides, about 7 to 10 minutes. Remove the meatballs to an ovenproof dish using a slotted spoon and place in the warmed oven.

Once all of the meatballs are cooked, decrease the heat to low and add the flour to the pan or skillet. Whisk until lightly browned, approximately 1 to 2 minutes. Gradually add the beef stock and whisk until sauce begins to thicken. Add the cream and continue to cook until the gravy reaches the desired consistency. Remove the meatballs from the oven, cover with the gravy and serve.

TDs&3 Game of the week sponsored by Ideal Wheels

Sioux City East vs. Sioux City West

Kickoff: 7:30pm Friday, October 7th

Location: Olsen Stadium, Morningside College

The Sioux City East Black Raiders under third year Head Coach Bob Goodvin enter this weeks game with an overall record of 2-4 on the season. More importantly the two lone victories are conference wins, with the latest being a 37-14 pounding of Council Bluffs Abe Lincoln. This season has come with some set backs to the Raider nation as they have had plenty of hurdles to over come. Between injuries and eligibility I don’t think anyone would have guessed them to be sub .500 at this point in the season. With most of that behind the Raiders have the possibility of winning the conference with a win this Friday and a win at Council Bluffs TJ to finish out the regular season.

After missing the first two games, Alex Imming is once again leading the Raider offense. Imming a 6’3″ senior currently has 816 yards on 67 of 109 passing with six touchdowns and five interceptions. Imming also leads the team in rushing with 86 carries for 633 yards and 10 touchdowns. Second behind Imming is Ethan Lara, a 5’9″ 160 lb senior with 75 carries for 406 yards and five touchdowns. Currently the Raiders have three receivers with over 200 yards on the year. Leading the team is Dom Thompson Williams with 512 yards on 33 receptions. Williams has found the end zone four times this season. Behind Williams is 6′ 150 lb junior Ronald Nash. Nash has 24 receptions for 207 yards. Right behind Nash and third on the team is 6’2″ 200lb junior Marcel Dunson, with 18 receptions for 206 yards and 4 touchdowns. On offense we have to protect the ball, last week (AL) was the first game all season that we did not have a turnover stated Coach Goodvin.

The Raider Defense is led by 6’0 185lb senior Blake Angerman. Angerman has 54 tackles so far this season. Second in tackles is 6’2″ 240 lb senior Connor Ulven with 39 tackles and 1 tackle for loss. Third is Zach Brown a 5’9″ 200lb senior with 37 tackles, 2 of which were for loss. West has big play capability and it will be key for East to limit how many the Wolverines have.

Head Coach Kyle Ewinger now in his second year at Sioux City West will be looking to put their first conference win in the books Friday night. The wolverines are currently 2-5 on the season and 0-1 in the conference. Last week they fell victim to Johnston losing 49-7. This week may prove a little different as they will get all their position players back after being out with injuries. Back behind center will be 6’1″ senior K-Anthony Fletcher. Fletcher has 589 yards on 48 of 92 passing and has found the end zone four time while having five interceptions. Fletcher has two receivers with over 200 yards receiving. Junior Dylan Smoody leads the team with 236 yards on 11 receptions and one touchdown. A close second is 5’11″ 160lb senior Darius Pearson. Pearson has 13 receptions for 215 yards and tow touchdowns. Taron Flemister returns this week after a high ankle sprain. Flemister is the only runningback over 100 yards on the season with 188 on the year. The key to winning is to have 5 big plays on offense, prevent turnovers, and winning the field position battle, states Coach Ewinger.

The Wolverine defense will need to contain the running game of the Black Raiders. That will mean stop Alex Imming. Imming is their real weapon and runs the ball a lot. Stopping him is a big task but is key in this game, stated Ewinger. The Wolverines will count on their leading tackler Anthony Combs to lead the run stopping effort. Combs a 6′ 210lb junior leads the team with 72 tackles and 9 being for loss. Another key to stopping the run will be 5’11″ 185lb senior Kyle Newsom. Newsom comes into the contest second on the team in tackles with 69 and has also recorded two sacks.

East has struggled on the year in stopping teams from scoring. With the big play possibility of the Wolverines the Black Raiders defense will need to play a error free game. Now that East has all their offensive starters back I feel they will prove to be too multi dimensional for West to stop.

TDs&3s Prediction: Sioux City East 45 – Sioux City West 17

Alex Imming (Senior): 6’3” 200lbs QB (Sioux City East)

Head Coach: Bob Goodvin

Alex flips over football, so says his parents Steve and Kim. Alex became the first Black Raider in history to rush for over a 1,000 yards and pass for over a 1,000 yards. Alex led the Black Raiders to a second round playoff game coming up short to Ames 24-14. Last season he had 1,735 yards passing with 14 touchdowns attempting 199 passes with 132 completions. On the ground he racked up another 1,100 yards on 216 carries finding the end zone 17 times. The only wish Alex would like granted is extending the season another four weeks. That wish could come true with a strong showing this post season. Football is not the only sport he has excelled at. As a Junior he was named 1st Team All-Conference in both football and basketball, and honored as Sioux City’s Metro Utility Player of the Year. As a member of the basketball team Alex has been privileged to be part of three state playoff teams and has qualified for state in track each of his three years in high school. In the classroom Alex has been an honor student every year and involved in the National Council on Youth Leadership. Alex enjoys his summers working at Lewis and Clark park as a concessionaire.

TDs&3 Game of the week sponsored by Ideal Wheels

OABCIG vs. Maple Valley-Anthon-Oto

Kickoff: 7:00pm Friday, September 30th

Location: Mapleton, IA.

The Falcons of OA-BC-IG are led into battle this week by 4th year Head Coach Larry Allen. On the season the Falcons boast a 4-1 record, with the only blemish a close loss last week to South Central Calhoun 20-14. In their four victories the Falcons have out-scored their opponents 172-54. Running the ball effectively and controlling the ball on offense is the key to a victory on Friday night states Head Coach Allen. Leading the running attack is 5’10″ junior Trevor Ryen. Ryen on the season has 56 carries for 534 yards and 7 touchdowns. This is a 9.5 yard per carry average. Brent Stickrod a 5’9″ 170lb senior is second in rushing yards with 285 on 48 attempts. Stickrod has found the endzone six times so far this year. The field general for the Falcons is 6’0″ 175lb senior Michael Grote. Grote has three rushing and four touchdown passes this season. While the air attack of the Falcons is limited Trever Ryen looks to be the go to receiver averaging 17.2 yards per reception.

Defensively the Falcons have only allowed 74 points the season. Of those 74 points 53 have come in two games. Leading the Falcon defense is 5’9″ 150lb senior Pat Billings. Billings has 45 tackles with one being for loss. Second to Billings is senior Brent Stickrod with 43 tackles on the year. Coach Allen expects to see a spread offense from the Rams, with short throws and lots of speed on offense.

Head Coach Dave Kuhl now in his 5th season bring a 1-4 record into this weeks rivalry game. Last week they fell victim to East Sac County losing 45-19. Low numbers this season have not helped the Rams as they are constantly battling to keep everyone healthy and ready to play on Friday nights. Leading the Rams is 5’8″ 145lb junior quarterback Ryan Dougherty. Dougherty broke the 1000 yard passing last week now with 1008 yards on the season. He has completed 68 of his 108 attempts with three touchdowns on the season. Dougherty’s leading receiver so far has been 6’1″ 165 lb junior Tanner Peterson. Peterson has 23 receptions for 370 yard averaging 16.1 per catch. Second to Peterson is 6’1″ senior Tyler O’Connell who has 16 receptions for 230 yards. Third on the ladder is junior Kyle Hardisty averaging 33.6 yards per reception. Hardisty has 5 receptions for 168 yards and is the only receiver to find the endzone with two touchdowns on the year. Coach Kuhl expects to see a five man set on the line with the Falcons trying to get pressure on the quarterback.

The defense of the Rams has allowed at least two touchdowns in each game on the year. “We can not give up the big play and think that we will win this game”, states Coach Kuhl. Look for the Rams to force turnovers to help with field position and allow their speed on offense to put points on the board. Senior Keenan Nepper leads the team in tackles with 50 on the season. Brodie Kafton a 5’10″ 165lb junior is second with 38 tackles, and one being for loss. Senior Zach Goslar leads the team in tackles for loss with eight. Goslar also has inked 5 sacks on the season along with his 30 tackles.

As much as this is a rivalry game for these two teams. I see it as a one sided battle this Friday. OA-BCIG is a ground and pound style offense that will wear you down. Unfortunately the Rams just do not have the numbers to go toe to toe with the Falcons.

TDs&3 Prediction: OA-BCIG 42 – MVAO 12
